- ¼ cup red wine vinegar
- 1 small shallot, minced
- 3 cloves garlic, minced
- 1 teaspoon kosher salt
- ¼ teaspoon red pepper flakes
- 1 cup packed fresh parsley leaves, minced
- ¼ cup packed oregano leaves, minced
- ½ cup extra-virgin olive oil
Instructions
1. Combine vinegar, shallot, garlic, salt and red pepper in a medium bowl; let stand 15 to 30 minutes.
2. Stir in parsley and oregano to vinegar mixture. Whisk in oil until combined.
Yield: about 1/2 cup
Cook’s Tip: Chimichurri sauce is a delicious condiment for grilled meats or as a marinade. You can also use other herbs such as cilantro or mint to make chimichurri.
