Cucumber & Howell Melon Salsa

Ingredients

SERVINGS: 2 Cup(s)
  • 1½ whole medium cucumbers, peeled, seeded and diced
  • ½ Howell melon, peeled, seeded and diced
  • 3 Roma tomatoes, seeded and diced
  • ½ small red onion, diced
  • ½ small jalapeño pepper, seeded and minced
  • 1 small bunch cilantro, chopped
  • 3 cloves garlic, minced
  • 3 whole small limes, juiced
  • 1 tablespoon extra virgin olive oil
  • ½ teaspoon coarse salt
  • ¼ teaspoon freshly ground black pepper

Instructions

Add all ingredients in a medium bowl and gently stir to combine. Serve immediately or chill up to one day.

Cook’s Note: Include the jalapeno seeds for a spicier salsa or omit jalapeno all together for a mild salsa.
