Ingredients

  • 1 pound fresh ricotta cheese
  • juice of ½ lemon
  • 2 tablespoons extra-virgin olive oil
  • black pepper

Instructions

Preheat oven to 350°. In a bowl, mix together the ricotta cheese and lemon juice. Press the mixed ricotta cheese into a glass loaf pan, making sure it is smooth on top and it is an even thickness. Drizzle with olive oil and sprinkle with freshly cracked pepper. Place in oven and bake until the top is golden brown, about 75 minutes. Remove from pan, slice and top with Sicilian tomato sauce.
