Ingredients
SERVINGS: Makes one 8” or 9” round or square cake or one dozen cupcakes.
CAKE
- 6 Tablespoons butter
- ¾ cup sugar
- 1 egg
- ½ teaspoon vanilla extract
- ½ cup mayapple pulp
- 1 cup sifted all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ¼ cup Greek yogurt
Ice Cream
- 1 cup whole milk
- 2 cups heavy cream
- 1 cup mayapple pulp
- ¼ cup sugar
- ½ teaspoon vanilla extract
- Pinch of salt
Preparation
Cake
Mix butter, sugar, egg and vanilla on low setting until creamy. Add mayapple and mix on low until completely combined.
Stir together flour, baking soda, baking powder and salt in a separate bowl.
Stir half of the dry ingredients into the wet ingredients. Then stir in the yogurt. Then stir I the other half of the dry ingredients.
Ice cream
Mix all ingredients together. Leave in refrigerator for two hours or more to make sure all sugar is dissolved. Whisk well. Add to ice-cream maker.
Some fun variations are to substitute ½ cup maple syrup or honey for the sugar, or to add ⅛ teaspoon ground wild ginger.
