Winter Kill Temperatures for Plants in Your Garden

Most plants can survive a short dip at these temperatures (a few hours, at most.)

• 35–32ºF — Basil, cucumbers, eggplant, melons, okra, tomatoes, peppers.

• 32–26ºF — Some cabbage varieties and most leafy greens

• 25–20ºF — Dill, endives, some bean varieties

• 20–15ºF — Some beet varieties, Brussels sprouts, some cabbages varieties, broccoli

• 15º–10ºF — Arugula, potatoes, turnips, collards,

• 10º–5ºF — Garlic, most kale varieties, chives and most onion varieties

FALL TRANSPLANTS (RECOMMENDED TO START INDOORS, BUT CAN ALSO BE SOWED DIRECTLY)

• Kale (any variety)

• Bok choy

• Cabbage (Napa, Deadon, Brunswick)

• Brussels sprouts

• Collards

FALL DIRECT SEED

• Mustard greens and Asian greens

• Spinach

• Turnips

• Radishes (French Breakfast and Red Rounds)

• Beets (Detroit Dark Red and Bull’s Blood)

• Carrots (Nantes carrot varieties)

• Beans (TopCrop, Tendercrop and Contender)

• Peas (shell and snap varieties)

• Garlic & Onions (won’t be ready until following spring)
