Stone Fruit Compote

Ingredients

  • 3—4 peaches or plums, pitted
  • 1 cup pitted cherries
  • ½ cup granulated sugar
  • ½ cup water
  • 2 tablespoons fresh mint leaves, sliced thin

Preparation

Dice the peaches or plums into equalsize pieces. Place in saucepot with the pitted cherries.

Add sugar and water and bring to a boil over medium heat. Cook until water has evaporated (6—8 minutes). Remove from heat and stir in mint. Cool. Enjoy.
