- ⅜ gallon milk
- 32 ounces heavy cream
- 4 ounces lemon juice
- ⅛ tablespoons salt
Preparation
METHOD
In a large pot, bring milk and cream up to 190 degrees F. Remove from heat. Add lemon juice and stir to incorporate. Let cheese coagulate for 1 hour. Strain over draining bowl with sieve lined with butter muslins. Place in bowl and stir in salt. Refrigerate immediately.
