- 8 peaches
- 1½ cups water
- ½ cup white vinegar
- ½ cup apple cider vinegar
- ½ cup brown sugar
- 1½ tablespoons whole cloves
- 1½ teaspoons allspice
- 2 cinnamon sticks
- 2 teaspoon kosher salt
- 1 teaspoon vanilla extract
Preparation
METHOD
Score peaches and blanch them in boiling water for about a minute and then plunge into ice water to shock them and stop cooking. Remove the skin, and then cut in half to remove the pit. Continue to cut into ¾-inch wedges.
Combine the water, vinegars and sugar and slowly start to bring up to a simmer. Add the spices, vanilla and then, after sugar is melted, remove from heat.
Pour liquid over the peaches and let sit at room temperature for 20 minutes, and then refrigerate.
