Ingredients

- 2 cups chopped kimchi
- 8 ounces pork butt or shoulder, diced
- 2 tablespoons gochujang
- 2 teaspoons sugar
- 4 cups broth (beef preferred)
For garnish
- Sliced green onion
- Diced tofu
Preparation
Place the kimchi, pork, gochujang and sugar in a heavy-bottom pot and heat to dissolve the sugar. Add the broth, bring to a boil and reduce heat to a simmer. Simmer for 60–90 minutes, until pork is tender. Adjust the seasoning with salt. Place in bowls and garnish with sliced scallions and diced tofu.
