- 1 tablespoon avocado oil
- 1 large Spanish onion, peeled and diced
- 8 ounces cream cheese, softened at room temperature
- 4 ounces sour cream
- 1 tablespoon white wine vinegar
- 1 bunch (about 5) green onions, cleaned and sliced thin
- Salt and pepper, to taste
Preparation
Preheat oil in a heavy-bottom sauté pan. Add the onions and cook on medium heat until caramelized. This process should take 10–15 minutes. Stir often. The longer you caramelize, the sweeter the onions will become. Remove from heat and let cool to room temperature. Mix caramelized onions with cream cheese and sour cream in a food processor and purée until smooth. Add vinegar and mix. Taste. Add salt and pepper to your liking. Stir in green onions and refrigerate until ready to serve.
Serve with vegetables, tortilla chips or your favorite cracker.
