Black-Eyed Pea Succotash

Ingredients

  • 1 cup fresh-cut corn
  • ½ cup cooked black-eyed peas
  • ¼ cup fresh-cut okra
  • 2 tablespoons diced red bell pepper
  • 1 tablespoon diced red onion
  • 1 teaspoon chopped garlic
  • 1 teaspoon mixed salt and pepper
  • ½ teaspoon smoked paprika

Preparation

Sauté all vegetables and black-eyed peas in a pan on medium-high heat for 3 minutes. Add salt, pepper and paprika and let cook for additional 2 minutes. Serve hot!
