Ingredients
- 1 cup fresh-cut corn
- ½ cup cooked black-eyed peas
- ¼ cup fresh-cut okra
- 2 tablespoons diced red bell pepper
- 1 tablespoon diced red onion
- 1 teaspoon chopped garlic
- 1 teaspoon mixed salt and pepper
- ½ teaspoon smoked paprika
Preparation
Sauté all vegetables and black-eyed peas in a pan on medium-high heat for 3 minutes. Add salt, pepper and paprika and let cook for additional 2 minutes. Serve hot!
