Ingredients
- 1 bulb fennel
- 1 tart red apple (Empire or Jona)
- 1 navel orange
- 1 tablespoon red wine vinegar
- ½ tablespoon honey
- 2 tablespoons avocado oil
- Salt and pepper
- Greens (arugula, spinach, baby kale
- all work well)
Instructions
- Shave the fennel using a mandoline.
- Julienne the apple and add to the fennel.
- Zest some of the orange into a separate bowl. Segment the orange and add to the fennel and apple, reserving the liquid into the bowl with the zest.
- Add the vinegar, honey and oil to the orange juice. Whisk and taste. Season the fennel mix with salt and pepper and toss with the dressing. Serve on top of your favorite greens.
