Mix dry ingredients in a bowl to combine flour, cornmeal, baking powder, salt, pepper and spices.
Mix wet ingredients in another bowl by whisking eggs and buttermilk together.
Stir in corn, scallions and your choice of chopped fresh herbs.
Add the dry ingredients to the wet mixture and stir until combined. The batter should be thick but spoonable.
Heat oil in a skillet over medium heat. Drop spoonfuls of batter into the hot oil. Fry evenly on both sides until golden brown.
Transfer cooked fritters to a paper-towel-lined plate to drain any excess oil.
Serve warm, accompanied by a complementary sauce such as aioli, remoulade, salsa or herbed yogurt.
Pair with a pickled vegetable, such as giardiniera, to enhance flavor and provide contrast.
